Crockpot Chicken Tortilla Soup



This was a big hit in our home! And SO easy to make. I love my crockpot...especially during the fall.

Here's the recipe:

Crockpot Chicken Tortilla Soup

2 Chicken Breasts
1 16 ounce can of Rotel (do not drain!)
1 Cup Corn
1 Cup Water
1 Chicken Bullion 
4 Tablespoons Sour Cream
avocado, sliced
Tortilla Chips

Add the chicken, corn, water, and bullion to the crockpot. Cook for 2-3 hours on high. Then add sour cream, and continue cooking for an additional 2 hours. When you are ready to serve the soup, ladel into bowls filled wth crushed tortila chips, and top with avocado slices & cheese. Enjoy!
